Healthy Vegan Brownie Recipe

One hand you are trying to stay true to your diet, while on the other hand, brownies are life - Let's Be Honest! 

Ready to know the secret on how to get toned while still enjoying the foods you love?  GIRL, IT'S POSSIBLE! 

Get rid of the OLD TRADITIONAL way of baking.⭐  Baked Goods Don't Have to Be Bad for You.  What comes to your mind when you think about baking: Sugar? Butter? Flavor?  What if I told you there are some small and easy substitutions you can make when you're baking to keep things flavorful and a bit healthier? Here's a recipe that proves you can have it all. At least when it comes to baked goods.

STEP #1:  Throw away all your butter, crisco, white sugar, vegetable & canola oil.  I'M FREAKING SERIOUS!!!!!

What you will need: 

INGREDIENTS: 
1/2 scoop of Pea Protein Powder, vanilla 

1/3 cup dairy-free/vegan chocolate chips

1/2 cup coconut oil melted

1/2 cup brown sugar or coconut sugar

2 large ripe bananas mashed (about 2/3 cups) 

2 chia eggs (2 tbsp chia seeds mixed with 6 tbsp water)

1 tablespoon vanilla extract

3/4 cup oat flour or (1/2 buckwheat & 1/2 coconut flour) 

¼ cup cocoa powder

1/2 teaspoon salt

1/2 tsp baking powder

1/4 tsp baking soda

Pro Tip: 
I honestly don't measure a thing when I make baked goods.
Because when you use different flour or ingredients it throws off the consistency.  Here is how you can do the same. 

  • Get the basic foundation down of what consistency the batter needs to be.  Cookies, Muffins & Brownies are thicker and Pancakes are slightly runny.
  • Just add more wet (coconut oil, nut milk, banana, etc) or dry (flour) ingredients to make the right consistency. 
⭐ WALLAHHHH you can fix any recipe! ⭐

INSTRUCTIONS: 

1 -Preheat the oven to 350°F and grease an 8" square nonstick baking dish with cooking spray then line it with parchment paper. I like cutting the paper long so it hangs over the side, making it easy to lift the brownies out of the pan.

2-  Place 1/3 chocolate chips into a microwave safe bowl. Microwave in 30 second intervals, stirring in between, until melted.  You'll be stirring the other 1/2 into the batter later.

3- In a bowl mix all wet ingredients.

4- In another bowl mix all dry ingredients. 

5- Use a rubber spatula to gently fold both mixtures together. Fold in the chocolate chunks.

6- Pour batter into prepared baking pan.

7- Bake in preheated oven for about 30 minutes, more or less depending on how fudgy you like your brownies. They should look set, but it’s ok if an inserted toothpick comes out with a little batter on it.

8- Remove from oven and cool completely before cutting. These need to cool completely or they’ll fall apart.

9-= You can then rewarm these to serve warm (with VEGAN ice cream please!) or serve them at room temperature or even chilled!
